Bacon Topped Cheese Potatoes

Ingredients

  • Servings: 4
  • 4 medium baking potatoes
  • vegetable oil
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1/4 cup butter
  • 1/2 cup shredded cheddar cheese
  • 3/4 teaspoon salt
  • pepper
  • 4 slices bacon, cooked &,crumbled

Recipe

  • 1 wash potatoes, and rub skins with vegetable oil.
  • 2 bake@ 400 degrees for one hour or until done.
  • 3 allow potatoes to cool to touch.
  • 4 cut a one inch lengthwise stip from top of each potato; carefully scoop out pulp, leaving shells intact.
  • 5 combine potatoe pulp and remaining ingredients except bacon in a mixing bowl.
  • 6 beat at medium speed of an electric mixer until light& fluffy; stuff shells with potato mixture.
  • 7 bake at 400 degrees for 15 minutes; top with crumbled bacon.
