Barbara's Creamy Carrot Bisque

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • 2 cups grated carrots
  • 2 small red potatoes
  • 1 red bell pepper
  • 1/4 cup chopped celery
  • 1/4 cup chopped onion
  • 2 cups chicken broth
  • 2 cups heavy whipping cream or 2 cups half-and-half cream
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 teaspoon ginger
  • 1/4 lb american cheese, in slices

Recipe

  • 1 chop all ingredients until fine in a food processor.
  • 2 in saucepan, combine first six ingredients, simmer until tender. do not overcook as vegetables should retain texture.
  • 3 put thru food processor.
  • 4 warm cream but do not boil until it thickens.
  • 5 slowly add broth and vegetables with seasonings and cheese.
  • 6 makes four servings.
