Barbara's Creamy Carrot Bisque

Ingredients
- 2 cups grated carrots
- 2 small red potatoes
- 1 red bell pepper
- 1/4 cup chopped celery
- 1/4 cup chopped onion
- 2 cups chicken broth
- 2 cups heavy whipping cream or 2 cups half-and-half cream
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 teaspoon ginger
- 1/4 lb american cheese, in slices
Recipe
- 1 chop all ingredients until fine in a food processor.
- 2 in saucepan, combine first six ingredients, simmer until tender. do not overcook as vegetables should retain texture.
- 3 put thru food processor.
- 4 warm cream but do not boil until it thickens.
- 5 slowly add broth and vegetables with seasonings and cheese.
- 6 makes four servings.
