Cold Potato And Leek Soup

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 teaspoon olive oil
  • 1/2 cup sliced leek
  • 2 cups peeled and diced yukon gold potatoes
  • 2 cups chicken broth
  • 1 cup evaporated skim milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon ground nutmeg
  • 1/4 cup sour cream
  • fresh chives

Recipe

  • 1 in a medium saucepan, sauté leeks in olive oil. add potatoes and chicken broth. bring to a boil.
  • 2 simmer 10-12 minutes. remove from heat and allow to cool slightly.
  • 3 in a food processor, puree soup until smooth. whisk in evaporated skim milk, sour cream and spices. cover and refrigerate at least 3 hours. serve garnished with chives.
