Cold Potato And Leek Soup

Ingredients

- 1 teaspoon olive oil
- 1/2 cup sliced leek
- 2 cups peeled and diced yukon gold potatoes
- 2 cups chicken broth
- 1 cup evaporated skim milk
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/8 teaspoon ground nutmeg
- 1/4 cup sour cream
- fresh chives
Recipe
- 1 in a medium saucepan, sauté leeks in olive oil. add potatoes and chicken broth. bring to a boil.
- 2 simmer 10-12 minutes. remove from heat and allow to cool slightly.
- 3 in a food processor, puree soup until smooth. whisk in evaporated skim milk, sour cream and spices. cover and refrigerate at least 3 hours. serve garnished with chives.
