Cheese Rosti

Ingredients
- Servings: 6
- 2 lbs potatoes, boiled in their skins
- 1 1/2 tablespoons butter
- 1/2 cup bacon, diced or 1/2 cup sliced onion
- 2 ounces sliced gruyere (5-6 slices)
Recipe
- 1 peel and shred potatoes.
- 2 heat butter in skillet, add potatoes, diced bacon and or onions and sprinkle with salt.
- 3 when a crust begins to form on the bottom, turn the rosti, top with cheese slices and press down.
- 4 cover tightly so that the cheese will melt nicely and cook until golden brown.
- 5 serve on a plate.
