Ingredients

- 3 tablespoons butter
- 1 onion, diced
- 2 stalks celery, diced
- 4 ounces mushrooms, diced
- 1/2 cup flour
- 2 cups milk
- 2 cups low sodium chicken broth
- 1 1/2 cups sour cream
- 2 cups colby-monterey jack cheese
- 1 teaspoon mrs. dash table blend seasoning
- 1/8 teaspoon pepper
- 8 cups potatoes, diced
Recipe
- 1 saute onion and celery in large pan in butter until nearly translucent; add mushrooms, cook through. sprinkle flour over and cook about a minute to form roux. add liquids and stir on low until thicken. add sour cream, cheese, mrs.dash, pepper stir to combine and finally the potatoes. put everything in crock-pot and cook 4 hours on high or until potatoes are cooked through.
