Butternut And Apple Curry Soup

Ingredients

- 1 butternut squash (chopped)
- 1 onion (chopped)
- 1 cooking potato (diced)
- 1 granny smith apple (peeled and chopped)
- 1 orange (freshly squeezed)
- 1/2 cup chicken stock
- 2 -3 cups milk
- 1/4 teaspoon grated nutmeg
- curry powder
- salt and pepper
Recipe
- 1 into a large pot place the chopped onion and glaze in olive oil for a fer minutes.
- 2 add the butternut, potato, apple.
- 3 stir into onion and let braise for a few minutes.
- 4 add curry powder and nutmet and mix into veg mixture.
- 5 add chicken stock and milk.
- 6 bring to boil and then reduce heat, stirring reguarly.
- 7 boil for approximately 20 mins until all vegetables are soft.
- 8 blend into creamy misture and serve.
