Butternut And Apple Curry Soup

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 2
  • 1 butternut squash (chopped)
  • 1 onion (chopped)
  • 1 cooking potato (diced)
  • 1 granny smith apple (peeled and chopped)
  • 1 orange (freshly squeezed)
  • 1/2 cup chicken stock
  • 2 -3 cups milk
  • 1/4 teaspoon grated nutmeg
  • curry powder
  • salt and pepper

Recipe

  • 1 into a large pot place the chopped onion and glaze in olive oil for a fer minutes.
  • 2 add the butternut, potato, apple.
  • 3 stir into onion and let braise for a few minutes.
  • 4 add curry powder and nutmet and mix into veg mixture.
  • 5 add chicken stock and milk.
  • 6 bring to boil and then reduce heat, stirring reguarly.
  • 7 boil for approximately 20 mins until all vegetables are soft.
  • 8 blend into creamy misture and serve.
