Carb Friendly Creamless Potato Soup

Ingredients
- 1 tablespoon oil
- 3 cups celery, sliced
- 2 cups potatoes, diced, i left the skins on
- 1 cup onion, chopped
- 1 teaspoon garlic, minced
- 2 (13 1/2 ounce) cans chicken broth
- 1 cup milk
- 1 tablespoon dijon mustard
- 1/2 cup cheese, shredded
- parsley, for garnish
Recipe
- 1 heat oil in large sauce pan over medium-high heat, heat oil until hot.
- 2 add celery, onion, garlic, and potato; stir for about 5 mins or until celery is crispy-tender.
- 3 add broth; bring to a boil, lower heat and simmer for 10 mins uncovered or potatoes are fork tender.
- 4 if you have an immersion blender, zing to your consistency of choice.
- 5 if you don't have one, pour 1/2 the mixture into your blender / food processor; blend until smooth, pour back into pot and add milk and mustard. heat 1 - 2 more minutes.
- 6 serve with shredded cheese and parsley.
