Caribbean Creamy Sweet Potato Soup

Ingredients

  • Servings: 4
  • 3 medium sweet potatoes
  • 1 teaspoon vegetable oil
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped celery
  • 1 garlic clove, crushed
  • 1 teaspoon dried basil
  • 2 cups skim milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon ground allspice

Recipe

  • 1 pierce sweet potatoes several times with a sharp knife and bake in a 350°f oven 1 hour or until tender.
  • 2 when cool enough to handle, peel, place in a large bowl and mash with a fork or potato masher.
  • 3 heat oil in a medium saucepan over medium heat. add onion, celery, garlic and basil.
