Carrot And Yam Soup

Ingredients

- 8 large carrots, shredded
- 1 large yam, shredded
- 1/2 cup old fashioned oats
- 1 quart vegetable stock
- 1 tablespoon garam masala (to taste)
- 1 cup coconut milk
- 8 tablespoons heavy whipping cream (optional)
Recipe
- 1 add shredded carrots and yams to a saucepan, and cook over medium heat, stirring until sizzling.
- 2 add oats and vegetable stock and bring to a simmer.
- 3 add garam masala, and carefully blend with an immersion blender until soup is creamy.
- 4 add coconut milk and stir. heat through, but don't let the soup boil.
- 5 serve, with 1 tbsp heavy whipping cream, optional.
