Carrot And Yam Soup

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 8 large carrots, shredded
  • 1 large yam, shredded
  • 1/2 cup old fashioned oats
  • 1 quart vegetable stock
  • 1 tablespoon garam masala (to taste)
  • 1 cup coconut milk
  • 8 tablespoons heavy whipping cream (optional)

Recipe

  • 1 add shredded carrots and yams to a saucepan, and cook over medium heat, stirring until sizzling.
  • 2 add oats and vegetable stock and bring to a simmer.
  • 3 add garam masala, and carefully blend with an immersion blender until soup is creamy.
  • 4 add coconut milk and stir. heat through, but don't let the soup boil.
  • 5 serve, with 1 tbsp heavy whipping cream, optional.
