Chicken, Chili- Potato Casserole

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 3 cups prepared chili with beans
  • 1 cup roasted chicken, shredded
  • 3 cups mashed potatoes
  • 4 ounces low-fat cream cheese
  • 1/2 cup crushed tortilla chips

Recipe

  • 1 preheat the oven to 400 degrees.
  • 2 spray a 9-inch square baking pan with cooking spray.
  • 3 carefully spread the chili over the bottom of the pan.
  • 4 sprinkle the shredded chicken over the chili.
  • 5 mix the mashed potatoes and cream cheese together and then spread that over the chicken and chili.
  • 6 cover the pan with aluminum foil and bake for 30 minutes.
  • 7 remove the aluminum foil and sprinkle the crushed tortilla chips over the top of the mashed potatoes.
  • 8 return to the oven for 5-10 minutes or until the top of the casserole is golden.
