Chunky Potato And Ham Soup

Ingredients

- 3 medium red potatoes, peeled and cut into cubes
- 2 cups water
- 1/4 teaspoon salt
- 1/4 cup onion, finely chopped
- 3 tablespoons butter
- 3 tablespoons all-purpose flour

- 3 cups milk
- 1 cup cheddar cheese, shredded
- 1 cup ham, cooked and cubed

Recipe
- 1 bring water and 1/4 teaspoon salt to a boil.
- 2 add potatoes and cook until tender.
- 3 drain and reserve 1 cup of cooking liquid (add water to measure 1 cup if necessary).
- 4 melt butter in a medium saucepan over medium heat.
- 5 saute chopped onion in the hot butter until tender.
- 6 add flour to butter and onion mixture and stir until smooth.
- 7 season with a little pepper and continue to cook and stir for 1 minute.
- 8 gradually add potatoes, reserved 1 cup of cooking liquid, and milk.
- 9 stir well and add cheese and ham.
- 10 simmer potato ham soup over low heat, stirring frequently, for about 20 minutes.
