Chunky Potato Soup

Total Time: 1 hr 5 mins Preparation Time: 35 mins Cook Time: 30 mins

Ingredients

  • Servings: 12
  • 3 medium red potatoes
  • 2 cups water
  • 1 small onion
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • cayenne pepper
  • ground black pepper
  • 3 cups milk
  • 1/2 teaspoon sugar
  • 1 cup shredded cheddar cheese
  • 1 cup cubed ham

Recipe

  • 1 peel potatoes and cut into 1 inch cubes.
  • 2 bring water to a boil in large pot.
  • 3 add potatoes and cook until tender.
  • 4 drain reserving 1 cup of the liquid and set aside.
  • 5 peel and finely chop onion.
  • 6 melt butter in saucpan and add oinions to pan.
  • 7 cook until onions are translucent and tender, not brown.
  • 8 add flour to pan; season with cajienne pepper and balck pepper to taste.
  • 9 cook 3-4 min.
  • 10 add potatoes and reserved liquid
  • 11 add milk and sugar all into saucepan with potatoes and onions, stir well.
  • 12 add cheese and ham.
  • 13 simmer 30 minutes, stirring frequently.
