Cold Cucumber Soup - For The Weight Watcher Or Diet

Ingredients

- 2 tablespoons reduced-fat butter or 2 tablespoons margarine
- 1 cup diced onion
- 3 1/2 cups chicken broth
- 1 cup diced peeled potato
- 4 cups diced cucumbers
- 1 cup plain yogurt
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 1/2 tablespoons snipped fresh dill
- cucumber, slices (optional)
- dill sprigs (optional)
- fresh edible flower (optional)
- toasted walnut pieces (optional)
Recipe
- 1 in a saucepan, melt butter over medium-low heat.
- 2 add onion, cook 10 minutes.
- 3 add broth and potato; bring to a boil.
- 4 reduce heat to low, simmer, uncovered, 10 minutes.
- 5 add cucumbers, continue to simmer 10 minutes, until vegetables are very tender.
