Cold Cucumber Soup - For The Weight Watcher Or Diet

Ingredients

  • 2 tablespoons reduced-fat butter or 2 tablespoons margarine
  • 1 cup diced onion
  • 3 1/2 cups chicken broth
  • 1 cup diced peeled potato
  • 4 cups diced cucumbers
  • 1 cup plain yogurt
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 tablespoons snipped fresh dill
  • cucumber, slices (optional)
  • dill sprigs (optional)
  • fresh edible flower (optional)
  • toasted walnut pieces (optional)

Recipe

  • 1 in a saucepan, melt butter over medium-low heat.
  • 2 add onion, cook 10 minutes.
  • 3 add broth and potato; bring to a boil.
  • 4 reduce heat to low, simmer, uncovered, 10 minutes.
  • 5 add cucumbers, continue to simmer 10 minutes, until vegetables are very tender.
