Bacon Spinach And Cream Potatoes

Ingredients
- Servings: 6
- 3 lbs idaho potatoes
- 1 medium onion, sliced
- 4 slices center cut bacon, chopped
- 1 cup cream
- 2 (8 ounce) boxes frozen spinach, thawed and drained
- salt and pepper
- extra virgin olive oil
- 1/4 teaspoon nutmeg (optional)
Recipe
- 1 dice potatoes, place in pot and cover with water.
- 2 bring to a boil, add salt to water.
- 3 cook until tender (10-15 min.).
- 4 in a small skillet over medium heat, add bacon and brown (7-8 minutes).
- 5 add onions, cook until soft (5 more minutes).
- 6 drain potatoes and return to pot.
- 7 add bacon and onions, and defrosted/drained spinach; mash to combine.
- 8 add cream and evoo; mash until smooth.
- 9 add salt, pepper, and nutmeg.
- 10 enjoy.
