Bacon Spinach And Cream Potatoes

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 3 lbs idaho potatoes
  • 1 medium onion, sliced
  • 4 slices center cut bacon, chopped
  • 1 cup cream
  • 2 (8 ounce) boxes frozen spinach, thawed and drained
  • salt and pepper
  • extra virgin olive oil
  • 1/4 teaspoon nutmeg (optional)

Recipe

  • 1 dice potatoes, place in pot and cover with water.
  • 2 bring to a boil, add salt to water.
  • 3 cook until tender (10-15 min.).
  • 4 in a small skillet over medium heat, add bacon and brown (7-8 minutes).
  • 5 add onions, cook until soft (5 more minutes).
  • 6 drain potatoes and return to pot.
  • 7 add bacon and onions, and defrosted/drained spinach; mash to combine.
  • 8 add cream and evoo; mash until smooth.
  • 9 add salt, pepper, and nutmeg.
  • 10 enjoy.
