Caramelized Onion Soup With Pear And Stilton

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 yellow onions, diced
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 1 large pear
  • 3 large yukon gold potatoes, diced
  • 3 cups chicken broth
  • 1/2 cup milk
  • 2 ounces blue cheese (stilton)
  • salt and pepper

Recipe

  • 1 melt butter and olive oil in large pot.
  • 2 add diced onion and cook over medium heat until well browned and caramelized.
  • 3 core, peel and dice pear.
  • 4 add to onions, stirring until lightly browned.
  • 5 add potatoes and chicken broth.
  • 6 simmer, covered, until potatoes are tender.
  • 7 puree with an immersion blender. (or regular blender).
  • 8 add milk and 1 1/2 ounces of stilton. heat through.
  • 9 serve garnished with remaining stilton crumbled on top.
