Cheesy Mashed Potato Casserole

Ingredients
- Servings: 6
- 5 medium potatoes, peeled and quartered (i like to use yukon gold potatoes)
- 1 (3 ounce) package light cream cheese
- 1/2 cup sour cream
- 1/4 cup green onion, minced
- 2 tablespoons melted butter
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/8 teaspoon pepper
- 1 tablespoon butter
- 1 dash paprika
Recipe
- 1 cook potatoes in boiling water until tender; drain.
- 2 mash.
- 3 stir in cream cheese, sour cream, onions, melted butter, salt, garlic powder and pepper.
- 4 place in a 2-quart casserole dish.
- 5 sprinkle with paprika and dot with butter.
- 6 bake, uncovered, at 375º for 20 minutes.
