Cheesy Mashed Potato Casserole

Total Time: 45 mins Preparation Time: 25 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 5 medium potatoes, peeled and quartered (i like to use yukon gold potatoes)
  • 1 (3 ounce) package light cream cheese
  • 1/2 cup sour cream
  • 1/4 cup green onion, minced
  • 2 tablespoons melted butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon pepper
  • 1 tablespoon butter
  • 1 dash paprika

Recipe

  • 1 cook potatoes in boiling water until tender; drain.
  • 2 mash.
  • 3 stir in cream cheese, sour cream, onions, melted butter, salt, garlic powder and pepper.
  • 4 place in a 2-quart casserole dish.
  • 5 sprinkle with paprika and dot with butter.
  • 6 bake, uncovered, at 375º for 20 minutes.
