Chicken And Vegetable Soup

Total Time: 1 hr 34 mins Preparation Time: 25 mins Cook Time: 1 hr 9 mins

Ingredients

  • Servings: 4
  • 4 chicken breasts
  • 5 carrots, sliced
  • 5 stalks celery, sliced
  • 1 turnip, sliced
  • 1 parsnip, sliced
  • 1 zucchini, sliced
  • 4 potatoes
  • 1 onion, sliced
  • 3 garlic cloves, chopped
  • 2 chicken bouillon cubes
  • 1 (420 g) can chicken broth
  • 2 tablespoons olive oil
  • parsley
  • thyme
  • 4 eggs

Recipe

  • 1 keep eggs, you only add them to the soup later.
  • 2 mix all the ingredients (except the eggs) and bring to the boil.
  • 3 simmer for about 1 hour. when potatoes are soft, add the eggs (not beaten but whole).
  • 4 simmer for a further 10 minutes.
  • 5 to serve make sure everyone gets the soup potatoe and 1 egg.
