Chicken-potato Chowder

Total Time: 5 hrs 15 mins Preparation Time: 15 mins Cook Time: 5 hrs

Ingredients

  • 3 chicken breast halves
  • 12 small red potatoes, unpeeled, cut into cubes
  • 2 cups frozen mixed vegetables, thawed
  • 1 cup chopped onion
  • 3 (14 ounce) cans chicken broth
  • salt and pepper

Recipe

  • 1 cut chicken into bite-sized pieces and saute until partially cooked; they shouldn't be cooked through.
  • 2 add chicken, potatoes, vegetables, onion, and broth to slow cooker.
  • 3 cover and cook on high 5 1/2 to 6 hours or until potatoes are tender. (check periodically to make sure it isn't cooked before 6 hours).
  • 4 add salt and pepper to taste.
