Bacon And Potato Frittata

Ingredients

- 4 slices bacon, cut into 1-inch pieces
- 1 1/2 cups potatoes, cut into 1/2-inch cubes
- 1 onion, chopped
- 6 eggs
- 1/2 cup water
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups frozen broccoli florets, thawed
- 3/4 cup cheddar cheese, shredded
Recipe
- 1 place bacon in 10-inch nonstick skillet over medium-high heat.
- 2 cook, stirring occasionally, until browned, 5 minutes.
- 3 add potatoes and onion; cover.
- 4 cook, stirring occasionally, until tender, 6-7 minutes.
- 5 beat eggs, 1/2 cup water, 1/2 t salt and 1/4 t pepper; stir in broccoli and 1/2 cup cheese.
- 6 add to skillet, cover.
- 7 over medium heat, cook until set, 8-10 minutes.
- 8 remove from heat.
- 9 sprinkle with remaining cheese; cover.
- 10 let stand until cheese is melted, 2-3 minutes.
