Buttered Potato Soup (klapsakkaa)

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 8
  • 2 cups mashed potatoes
  • 4 cups milk
  • 2 cups half-and-half
  • salt and pepper
  • 1 dash ground allspice
  • 2 tablespoons chopped fresh parsley
  • 4 teaspoons butter

Recipe

  • 1 in a medium saucepan, beat potatoes and milk with a whisk until smooth.
  • 2 stir in half and half.
  • 3 stir over medium heat until soup barely comes to a boil.
  • 4 add salt and pepper to taste.
  • 5 sprinkle top with a dash of allspice.
  • 6 ladle into individual bowls or mugs.
  • 7 garnish with parsley and 1/2 teaspoon butter.
  • 8 serve immediately.
