Cheese Soup (from Switzerland)

Ingredients
- Servings: 4
- 1/2 cup oatmeal
- 1 teaspoon salt
- 1/2 cup butter
- 4 -6 cups water (or consomme)
- 2 potatoes, peeled and cut into thin slices
- 2 cups grated emmenthaler cheese
- 1 dash nutmeg (optional)
Recipe
- 1 saute the oatmeal and salt in half the butter until golden brown.
- 2 add the water; bring to a boil. cook over low heat, stirring occasionally and adding water if necessary, until the oatmeal is cooked into a gruel. this will take about 90 minutes.
- 3 add the sliced potatoes. cook about 30 minutes until they are tender.
- 4 stir in the grated cheese, remaining butter and nutmeg if desired. add additional hot water if it's too thick.
