Cheese Soup (from Switzerland)

Total Time: 2 hrs 15 mins Preparation Time: 15 mins Cook Time: 2 hrs

Ingredients

  • Servings: 4
  • 1/2 cup oatmeal
  • 1 teaspoon salt
  • 1/2 cup butter
  • 4 -6 cups water (or consomme)
  • 2 potatoes, peeled and cut into thin slices
  • 2 cups grated emmenthaler cheese
  • 1 dash nutmeg (optional)

Recipe

  • 1 saute the oatmeal and salt in half the butter until golden brown.
  • 2 add the water; bring to a boil. cook over low heat, stirring occasionally and adding water if necessary, until the oatmeal is cooked into a gruel. this will take about 90 minutes.
  • 3 add the sliced potatoes. cook about 30 minutes until they are tender.
  • 4 stir in the grated cheese, remaining butter and nutmeg if desired. add additional hot water if it's too thick.
