Creamy Mashed Potatoes

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 8
  • 1 (5 lb) bag red potatoes, peeled and cut into 1-inch pieces
  • 3/4 cup sour cream
  • 1/2 cup butter, softened
  • 1 (3 ounce) package cream cheese, softened
  • 2 teaspoons salt
  • 1/2 teaspoon fresh ground black pepper

Recipe

  • 1 in large dutch oven, combine potatoes and water to cover.
  • 2 bring to a boil over high heat.
  • 3 reduce heat, and simmer for about 10 minutes, or until potatoes are tender; drain well.
  • 4 in large bowl, combine potatoes, sour cream, butter, cream cheese, salt and pepper.

  • 3 fluid ounces cooking oil
  • 4 fluid ounces heather honey
  • salt

  • 2 medium green peppers, chopped
  • 2 medium onions, chopped
  • 2 garlic cloves, minced

  • 1 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

  • 1 trim fat from steak and cut into seving-size pieces.

Creamy Mashed Potatoes

Ingredients

  • 2 lbs yukon gold potatoes, chopped
  • 1 teaspoon salt
  • 4 tablespoons butter
  • 4 ounces cream cheese
  • 1/2 cup milk
  • salt and pepper

Recipe

  • 1 cook potatoes in boiling salted water 20-25 minutes or until tender. drain.
  • 2 mash potatoes with salt and pepper, butter, cream cheese and milk.
  • 3 serve hot with gravy of your choice.

Chicken In Sherry Vinegar

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 1 (3 1/2 lb) whole chickens, cut into pieces
  • 1 ounce butter
  • 1 tablespoon olive oil
  • 1 large onion, finely chopped
  • 3 garlic cloves
  • 3 carrots, finely chopped
  • 2/3 cup sherry wine vinegar
  • 8 tomatoes
  • 1 tablespoon chopped fresh parsley
  • salt & pepper

Recipe

  • 1 heat a large casserole dish and add butter. add chicken and cook until skin side is golden brown.
  • 2 add the onion, garlic and carrots to the chicken, along with half the sherry vinegar.
  • 3 cover, reduce the heat, and cook for 30 minutes.
  • 4 meanwhile, deseed and skin the tomatoes. heat the oil in another pan and add the tomatoes, cook slowly for 10 minutes and take off the heat.
  • 5 remove the chicken from the large pan and keep warm. reduce the cooking liquid until almost dry. add the rest of the vinegar and reduce by half.
  • 6 put the chicken back in, add the tomatoes and parsley. season and serve with mashed sweet potatoes and griddled baby leeks.

Cinnamon Sweet Potato Fries

  • 2 sweet potatoes (large)
  • 1/3 cup extra virgin olive oil
  • 3 teaspoons cinnamon (ground)
  • salt (seasoned salt)

Recipe

  • 1 preheat oven to 350 degrees f.
  • 2 peel sweet potatoes and then slice into french fry style sticks.
  • 3 line a jelly roll pan with a sheet of baker's parchment paper.
  • 4 toss sweet potato fries in a bowl with olive oil to coat sweet potatoes.
  • 5 lie sweet potato fries on to the parchment paper.
  • 6 sprinkle with salt.

  • 1 (10 3/4 ounce) can campbell condensed golden mushroom soup
  • 1 (10 3/4 ounce) can campbell condensed french onion soup
  • 4 boneless skinless chicken breasts

  • 1 mix condensed soups together in a baking dish large enough to hold the chicken.
  • 2 add chicken on top of mixed soups.

Ingredients

  • 2 cups potatoes, cooked and cubed
  • 1 small onion, chopped
  • 1/2 green pepper, chopped
  • 1 garlic clove, chopped
  • 1/2 lb bacon, cooked and chopped to equal 1/2 cup

  • 2 tablespoons milk or 2 tablespoons water
  • 1 tablespoon butter or 1 tablespoon margarine

  • 1/2 lb yams or 1/2 lb sweet potato

Recipe

  • 1 boil the potatoes and yams in a large pot, chop them, and mash. you may peel them if desired, though that puts down the fiber content.

Ingredients

  • 2 large onions, roughly chopped
  • 5 garlic cloves
  • 2 inches gingerroot, peeled
  • 1 teaspoon chili powder
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 3 tablespoons oil
  • 750 g beef steaks, cut into largish pieces, i used rump
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coriander powder
  • 375 g potatoes, peeled quartered or 3 large potatoes
  • 2 cups water

Recipe

  • 1 place the onions, ginger and garlic in a food processor and process until smooth.
  • 2 add the chili powder, and turmeric and paprika until combined.
  • 3 heat the oil until smoking point is reached, then add the contents of the processor or blender.
  • 4 be very careful as this mix will splutter as it hits the very hot oil.
  • 5 stir into the oil, reduce the heat of your burner to low, cover, and cook for about 30 minutes.
  • 6 you will need to stir fairly regularly, and be patient.
  • 7 the mix will begin to evaporate, start to smell sweeter and eventually turn a redish brown, with the oil seperating to the edges.
  • 8 it may take more than 30 minutes, like i said, be patient!
  • 9 mix the cumin, coriander and salt together and massage through the steak pieces.
  • 10 add the steak and potatoes to the onion mix, fry for a couple of minutes, then add the water.
  • 11 bring to the boil, stirring, then reduce the heat and cover.
  • 12 cook for about 30 minutes or until the potatoes are tender.
  • 13 remove the lid, increase the heat and cook for a further 15 minutes or until the sauce is thickened and reduced.
  • 14 serve over plain rice.

  • 1 lb bulk breakfast sausage (optional)
  • 3 cups potatoes, shredded, drained and pressed
  • 1/4 cup butter, melted
  • 12 ounces mild cheddar cheese, shredded
  • 1/2 cup onion, minced
  • 1/2 cup green pepper, chopped
  • 1 lb small curd cottage cheese
  • 6 large eggs

Recipe

  • 1 preheat oven to 375 degrees fahrenheit.

  • 2 lbs mashed potatoes (hot)
  • 2 eggs (lightly beaten)
  • 4 teaspoons cornstarch
  • 2 tablespoons olive oil
  • 2 (2 ounce) cans of dice green chilies, drained
  • 4 tablespoons sofrito sauce
  • 4 tablespoons tomato sauce
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • vegetable oil (for deep frying)

  • 1 pan fry the diced potatoes, salt, pepper and garlic powder in a little shortening, vegetable oil or rendered bacon fat until browned and nearly done; add onions and peppers and continue to cook until potatoes are done and onions and peppers are tender. (or you can fry up a pre-packaged bag of o'brian potatoes if desired).
  • 2 remove from heat and stir in the meat and scrambled eggs.
  • 3 cut the tortillas in half; lay them in a 9 x 13 rectangular pan, placing the cut edges square to the side of the pan, over lapping as needed.
  • 4 spread a 1/3 of the meat, potato and egg mixture on top of tortillas.
  • 5 pour 1/2 cup of the sauce over the meat, potatoes and egg.
  • 6 sprinkle on 1/2 cup of the cheese.
  • 7 repeat layer once more.
  • 8 add one more layer by adding tortillas and meat, potatoes and egg.
  • 9 top with another layer of tortillas; pour last cup of sauce over the tortilla covered casserole.
  • 10 sprinkle with remaining cheese.
  • 11 bake in 350 degree oven until hot and the cheese is melted.
  • 12 top with lettuce and tomatoes if desired.

  • 1 1/2 tablespoons prepared mustard (i used grey poupon)
  • 1/8 teaspoon rubbed sage

  • 1 begin by boiling the brats in whatever liquid you're using. i used vegetable broth, because it was what i had on hand.
  • 2 saute the onions in the olive oil until the onions are golden brown.
  • 3 add the diced potatoes and cover. add salt and pepper to taste, as well as sage. you will need to stir them occasionally so the onions don't burn. cook for about 5-10 minutes or until the potatoes are brown and crispy on the edges and flaky on the inside.
  • 4 add eggs and mustard, mix, and heat through.
  • 5 brown brats in the same skillet and garnish the potatoes with paprika.

  • 4 medium carrots, halved diagonally
  • 1 cup dry wine (preferably riesling)
  • 1 lb small red potato, about 2-inch in diameter
  • 2 tablespoons flat leaf parsley, finely chopped
  • 1/2 cup heavy cream
  • lemon juice, to taste
  • sea salt, to taste
  • fresh ground black pepper, to taste

  • 1 preheat oven to 350*f.
  • 2 pat chicken dry and sprinkle generously with salt & pepper.
  • 3 heat oil & 1 tbsp butter in large dutch oven until foaming subsides.
  • 4 in 2 batches, brown chicken on both sides, flipping once. about 5minutes per side. transfer chicken to a plate.
  • 5 meanwhile wash the leeks thoroughly and chop vegetables.
  • 6 pour the fat from the pan, then add the remaining butter (2tbsp). cook the leeks, shallot, and about 1/4 tsp salt in the pan, covered until the leeks are just beginning to brown, about 7 minutes.
  • 7 add the chicken (skin side up) and any accumulated juices, carrots, and wine. boil until liquid is reduced by half, about 5 minutes.
  • 8 cover the dutch oven and place in the oven for 25 minutes (you can turn off the oven and leave the chicken in for about another 15 minutes if you need the additional time).
  • 9 while the chicken is in the oven, place the potatoes and 1 tsp salt in a saucepan, cover with cold water and bring to a boil. simmer until potatoes are tender, about 15 minutes.
  • 10 drain potatoes and return to saucepan. add the parsley and shake to coat.
  • 11 when you remove the chicken from the oven, add the cream. season to taste with the lemon juice, salt , and pepper.

  • 1/2 cup oil (olive, sunflower, vegetable)

  • 4 garlic cloves, minced (i put them in the food processor with the onions)
  • 2 lbs ground beef (you can do half beef, half lamb too)
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon
  • 2 1/2 cups milk
  • 4 tablespoons unsalted butter
  • 4 tablespoons flour
  • 1/3 cup parmesan cheese (from a jar is fine)
  • 1 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon
  • 1 cup cheese, grated (mozzarella, cheddar, swiss)

  • 1 peel and boil the potatoes.
  • 2 cut eggplant up into 1/4 inch slices, salt, place into strainer and weigh down for 15 minutes. (i don't actually strain them, but most people do).
  • 3 meat layer: saute onion and garlic in 2 tbsp of oil (i prefer olive). add ground meat, cumin, cinnamon, nutmeg, allspice and salt. brown meat while breaking up the clumps. set aside.
  • 4 drizzle just enough (olive) oil to cover the bottom of a hot pan. place eggplant slices in pan. brown both sides of all the eggplant slices. they're thirsty little guys so you'll have add oil to pan as you go.
  • 5 cut boiled potatoes into 1/4 inch slices.
  • 6 cream sauce: in a sauce pan, on low heat, melt butter. then add flour, stir until it has the consistency of cookie dough, don't let it brown.
  • 7 add milk, a bit at a time. (if you do it all at once you'll have clumps). you want a thick cream soup consistency.
  • 8 add cheese, nutmeg, cinnamon, allspice, cumin and salt. stir until smooth and blended. set aside.
  • 9 spread some cream sauce in the bottom of a 13x9 pan. layer eggplant, meat, sauce, potaotes, meat, sauce, eggplant, sauce and grated cheese.
  • 10 bake 30 min at 450. i like to cover it with tin foil for the first 20 min and then take it off for the last ten so the cheese can get a bit brown.
  • 11 even more delightful after freezing and reheating.
  • 12 note: i add spices to taste. 1/4 tsp is a conservative start, go wild! freshly grated spices give an added zing. i also add onion and garlic power when on hand. also i use 3 parts veg oil and 1 part olive oil to get the taste but ease the cost.

  • 2 tablespoons olive oil
  • 1/4 cup flour
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 3 -3 1/2 lbs cut up chicken pieces
  • 1 large onion, chopped
  • 2 cloves garlic, chopped
  • 2 large carrots, chopped
  • 1 medium green pepper, chopped
  • 2 medium tomatoes, chopped
  • 12 ounces lager beer
  • 2 medium potatoes, peeled and cut into 1/2 inch cubes

Recipe

  • 1 in a ziplock bag, mix the flour, 1 tsp of the salt and the pepper.
  • 2 add the chicken pieces, seal the bag and shake up and down to coat the chicken.
  • 3 heat oil in a large, fairly deep frying pan.
  • 4 add chicken and cook on both sides until golden brown, about 15-20 minutes.
  • 5 remove chicken from the pan.
  • 6 lower the heat slightly and add the onion, garlic and pepper to the pan.
  • 7 sauté for a couple minutes, then add the carrots.
  • 8 cook for another couple minutes, then add the tomatoes and remaining salt, if needed.
  • 9 cook for about 5 minutes, stirring occasionally.
  • 10 stir in the beer and potatoes.
  • 11 top with the chicken and bring to a boil.
  • 12 cover and let simmer over a low heat for 30 minutes.
  • 13 remove the cover and cook for 5-10 minutes, until the sauce has thickened slightly.
  • 14 you can re-brown the chicken in a bit of oil in a second skillet, just before serving.
  • 15 i find it needs this"touch up" especially if it still has the skin on.

  • 6 large baking potatoes, washed and cut into bite sized cubes
  • 2 lbs bacon, cut into bite sized pieces (sausage links work good too)
  • 1 medium onion, chopped
  • 1 dozen egg
  • 1/4 cup milk
  • salt and pepper
  • 12 -14 flour tortillas

Recipe

  • 1 cook bacon until almost done (dutch ovens work best for oamc, use a good nonstick pot), don't over cook the bacon will burn while you cook potatoes.
  • 2 add onions and cook for a minute or two, until softened.
  • 3 add potatoes, stir to coat in bacon drippings and cover.
  • 4 cook covered for approximately 15 minutes, or until potatoes are done, stirring occasionally. put the tortillas on top of the potatoes while they cook, this steams them and makes them moist.
  • 5 while you are waiting for potatoes to finish cooking, wisk the eggs and milk. mix well.
  • 6 salt and pepper your potatoes, cook uncovered a minute longer.
  • 7 add eggs to potato mixture, cook stirring almost constantly until egg is finished. be very careful to not overcook the egg. egg must still be very moist but not overcooked. it alters the flavor otherwise.
  • 8 remove from heat.
  • 9 place 1/2 cup measurements into containers.
  • 10 wrap tortilla's in wax paper, seal well (use masking tape if you want to) and place on top of potato egg mixture then cover and freeze. alternatively you can fill and wrap them, the problem is the yucky ends are harder to control. make sure when you steam your tortillas you don't let them get dry afterwards. you want them drenched in steam, fill them and tightly tightly wrap them in 2 big pieces of plastic wrap.
  • 11 either serving (container or rolled up) should be reheated on high for 5 minutes.

  • 3 in a large bowl combine, thinly chopped onion, celery, mayonaise, mustard, relish, salt and pepper. mix together all ingredients.
  • 4 add cooked, diced potatoes, and chopped eggs. stir well, but not so much to damage the diced potatoes. serve warm or chilled.

  • 1/2-3/4 cup flour
  • 3 -4 pieces bacon, cut in small pieces

  • 1 mix all of the above ingredients together,except bacon, adding just enough flour to make a doughy consistency.
  • 2 bring a large pot of water to a rolling boil and add 1 teaspoon of salt to the water.
  • 3 smear potato mixture on a small saucer and flick about one inch pieces into the boiling water.
  • 4 start with just a few pieces - if they break apart, you need to add more flour to the mixture. if they stay together in the boiling water, cook until they float to the top, then cook another 3-4 minutes.

  • 4 stirring all the time, slowly add wine then cream. stir until thickened.

  • 1 whole chicken
  • 1 small whole onion
  • 1 carrot
  • 3 bay leaves
  • 1 tablespoon peppercorn

  • 1 lb jerusalem artichoke, peeled and sliced
  • 1 fennel bulb, sliced
  • 1 tablespoon all-purpose flour
  • 6 tablespoons freshly grated horseradish
  • 3/4 cup heavy cream
  • 1/4 cup chopped chervil
  • salt and pepper

Recipe

  • 1 put the chicken in a large casserole with the onion, carrot, bay leaves, peppercorns, and salt. add water to cover , bring to a boil and simmer for 1 hour, or until the meat is . take the chicken from broth _ let cool. strain the broth reserve 2 1/2 cups for the sauce.
  • 2 make the sauce. melt the butter in a large pan. add the sliced artichokes and fennel and cook for 2 minutes. sprinkle the flour over the vegetables and stir until the flour and butter have combined. pour in half the reserved chicken broth and stir until smooth. add the remaining chicken broth and the horseradish and bring to a boil. add the cream and salt and pepper and return the sauce to a boil, then decrease the heat to a simmer.
  • 3 remove the skin and bones from the chicken. break the meat into medium-size pieces. stir the chicken and chervil into the sauce and let it simmer for a couple of minutes, or until the chicken is heated through. season with salt and pepper and serve with boiled potatoes.

Breakfast Casserole

  • 1 (32 ounce) bag frozen southern style hash brown potatoes
  • 1 lb bacon, cut, fried and drained
  • 1 lb sausage, crumbled, browned and drained
  • 1/2 cup diced onion
  • 1 green pepper, diced
  • 3/4 lb cheddar cheese, diced
  • 1 dozen egg
  • 1 cup milk
  • 1/2 teaspoon dry mustard
  • salt and pepper

Recipe

  • 1 layer the frozen potatoes, bacon, onions, green pepper and cheese in the crockpot in two or three layers.
  • 2 finish up with cheese.
  • 3 beat the eggs, milk, mustard, salt and pepper together.
  • 4 pour over the whole mixture.
  • 5 cook on low for ten to twelve hours.

Baked Round Steak

  • 1 round steak, cut into chunks
  • 2 tablespoons flour
  • 2 tablespoons oil
  • 1 (10 ounce) can cream of mushroom soup, undiluted

  • 1 (4 ounce) can diced mushrooms, drained

Recipe

  • 1 preheat oven 350 degrees.
  • 2 dust steak chunks in flour that has been seasoned with salt and pepper or montreal steak seasoning.
  • 3 brown steak chunks in oil in a skillet.
  • 4 place steaks pieces in a 9 x 13 pan that has been sprayed with pam.
  • 5 in a small pot, bring soup, broth and mushrooms to a boil. mix well and pour over steak -- cover with foil and bake 2 hours or until steak is tender. serve over mashed potatoes or buttered noodles.

Basic Potato Latkes

Ingredients

  • Servings: 6
  • 2 lbs potatoes or 1 kg potato
  • 2 large eggs
  • salt
  • oil (for frying)
  • applesauce
  • sour cream

Recipe

  • 1 peel and finely grate the potatoes.
  • 2 plunge directly into cold water and soak briefly.
  • 3 drain and squeeze as dry as possible by hand, using a colander, to remove the starchy liquid. this will help keep the latkes crispy.
  • 4 beat eggs lightly with salt, add to potatoes, stir well.
  • 5 barely cover the bottom of a frying pan with oil, and heat.
  • 6 drop serving-spoonfuls (or up to 1/4 cup at a time) into the hot oil, and flatten slightly.
  • 7 lower heat to cook evenly.
  • 8 brown one side, then turn and brown the other. be careful not to overcook.
  • 9 remove from oil with a slotted spoon, drain on paper towels.
  • 10 serve piping hot with applesauce and sour cream on the side.
  • 11 variations:.
  • 12 add finely chopped onion, black pepper, and chopped parsley to the mixture before cooking, all to taste.
  • 13 add 4t potato flour to make the patties firmer, more compact, and easier to handle, but the eating experience won't be quite as nice.
  • 14 add a little hot pepper to taste.
  • 15 sprinkle a bit of powdered sugar on top and skip the applesauce and sour cream. if you use the potato flour to bind them, they can be eaten by hand almost like doughnuts, once they are cool enough, of course!

  • 4 chicken breasts
  • 1 head fennel, sliced
  • 4 tablespoons sambuca romana, spirit
  • 5 fluid ounces single cream
  • 6 ounces cheese, rind removed and cut into small dice (brie)

Recipe

  • 1 heat the oil in a frying pan and fry the chicken till done.
  • 2 remove from pan and keep warm.
  • 3 fry the sliced fennel till just soft, 3 minutes set aside.
  • 4 de glaze the pan with the sambuca, add the cream.
  • 5 add the cheese and stir till it has melted and incorporated into the sauce.
  • 6 adjust the seasoning to taste.
  • 7 replace the chicken and fennel, heat through.
  • 8 the sauce may be adjusted by adding more cream or sambuca to your liking.
  • 9 serve with sauteed potatoes and a green vegetable.
  • 10 wonderful.

Burnt Orange Autumn Vegetable Soup

  • 1 whole head of garlic
  • 1/2 large onion
  • 4 cups butternut squash, peeled, diced, about 2 lbs
  • 1 small sweet potato, peeled and cut into chunks, about 1/2 lb
  • 2 carrots, peeled and cut into chunks
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme leave
  • 1/4 teaspoon salt
  • 4 cups low sodium chicken broth
  • 1/4 teaspoon fresh ground black pepper
  • 1/2 cup plain yogurt

Recipe

  • 1 cut top quarter off the head of garlic and place cut side down on a baking sheet lined with parchment paper (or sprayed with cooking spray).
  • 2 combine onion, squash, sweet potato and carrots in a large bowl and toss with olive oil, thyme and salt.
  • 3 spread on baking sheet with garlic.
  • 4 roast garlic and vegetables in a preheated 350 degree f. oven for 45 to 50 minutes until very tender.
  • 5 squeeze garlic into food processor and add roasted vegetables. puree mixture adding a bit of stock, if necessary.
  • 6 transfer to saucepan and add stock to desired consistency.
  • 7 bring to a boil and simmer gently 10 minutes.

  • 9 serve in large soup bowls with a splash of yogurt on top, if desired.

  • 1 place the potatoes in a large cooking pot and cover with cold water. bring to a boil. reduce the heat to medium low. simmer until the potatoes are just tender (20 to 30 minutes).
