Chili-topped Potatoes

Ingredients

- 4 large baking potatoes
- vegetable oil
- 1/2 lb ground beef
- 1/3 cup finely chopped onion
- 1 garlic clove, minced
- 1 (8 ounce) can tomato sauce
- 1/2 cup water
- 1 -1 1/2 tablespoon chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- shredded cheddar cheese
- chopped green onion
Recipe
- 1 wash potatoes and rub with oil. bake at 400 degrees for 1 hour or until soft when pierced with a fork.
- 2 cook ground beef, onion and garlic in a large skillet until beef is browned, stirring to crumble. drain well. add next 5 ingredients; reduce heat and simmer 30 minutes or until thickened.
- 3 split tops of potatoes lengthwise and fluff pulp with a fork. spoon topping over potatoes. sprinkle with cheese and green onions.
