Ingredients

- 1 lb sliced bacon or 1 lb ham, diced
- 1 medium onion, diced
- 6 eggs, lightly beaten
- 4 cups frozen hash brown potatoes, thawed
- 2 cups shredded cheddar cheese
- 1 1/2 cups small curd cottage cheese
- 1 1/4 cups shredded swiss cheese
Recipe
- 1 in a large frying pan, cook bacon and onion until bacon is crisp; drain.
- 2 combine the remaining ingredients in a bowl then add bacon and onions. transfer to a greased 13x9x2"-inch baking dish.
- 3 bake, uncovered, at 350 for 35-40 minutes or until set and bubbly. let stand for 10 minutes before cutting.
