Creamy Mashed Potatoes With Chives

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 10
  • 3 lbs peeled yukon gold potatoes, , quartered
  • 2/3 cup nonfat milk
  • 1 teaspoon salt
  • 2/3 cup light cream cheese with chives and onions

Recipe

  • 1 place potatoes in a dutch oven, and cover with water; bring to a boil.
  • 2 reduce heat, and simmer for 10 minutes or until tender.
  • 3 drain.
  • 4 return potatoes to pan; add the milk and salt.
  • 5 mash the potato mixture with a potato masher to desired consistency.
  • 6 add the cheese, and stir just until blended.
