Creamy Mushroom Potato Bake

Total Time: 1 hr 10 mins Preparation Time: 45 mins Cook Time: 25 mins

Ingredients

  • Servings: 10
  • 2 1/2-3 lbs potatoes, peeled
  • 1 onion, finely chopped
  • 1/2 lb fresh mushrooms, chopped
  • 3 tablespoons butter or 3 tablespoons margarine, divided
  • 1/2 cup sour cream
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup grated parmesan cheese

Recipe

  • 1 in a saucepan of boiling salted water, cook potatoes until tender; drain and mash.
  • 2 in a skillet, melt 2 tablespoons butter; saute onion and mushrooms for 3-4 minutes or until tender.
  • 3 stir into potatoes; add sour cream, salt, and pepper; mix well.
  • 4 spoon into a greased 2 quart baking dish.
  • 5 sprinkle with parmesan.
  • 6 dot with remaining butter.
  • 7 bake, uncovered at 400 degrees for 20-25 minutes or until heated and golden brown.
