Creamy Mushroom Potato Bake

Ingredients

- 2 1/2-3 lbs potatoes, peeled
- 1 onion, finely chopped
- 1/2 lb fresh mushrooms, chopped
- 3 tablespoons butter or 3 tablespoons margarine, divided
- 1/2 cup sour cream
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup grated parmesan cheese
Recipe
- 1 in a saucepan of boiling salted water, cook potatoes until tender; drain and mash.
- 2 in a skillet, melt 2 tablespoons butter; saute onion and mushrooms for 3-4 minutes or until tender.
- 3 stir into potatoes; add sour cream, salt, and pepper; mix well.
- 4 spoon into a greased 2 quart baking dish.
- 5 sprinkle with parmesan.
- 6 dot with remaining butter.
- 7 bake, uncovered at 400 degrees for 20-25 minutes or until heated and golden brown.
