Baked Red Potatoes With Anchovies & Tomatoes

- 2 lbs red potatoes, peeled
- 2 tablespoons olive oil
- 1 (14 ounce) can diced tomatoes, drained
- 1 garlic clove, minced
- 2 tablespoons canned anchovies, drained and chopped
- 1/4 cup parmesan cheese, freshly grated
Recipe
- 1 in a large pot of lightly salted water, boil potatoes until tender.
- 2 drain and let cool enough to handle then slice.
- 3 preheat oven to 350*f.
- 4 in a large skillet heat oilive oil over med-high heat.
- 5 saute tomatoes and garlic until aromatic, stir in anchovies.
- 6 layer potatoes and tomato mixture in a 8 cup casserole dish and sprinkle with cheese.
- 7 bake for 40 minutes, or until hot and bubbling.
