Creamy Mashed Sweet Potatoes

Ingredients

- 4 tablespoons unsalted butter, cut into 4 pieces
- 3 tablespoons heavy cream
- salt
- pepper
- 1 teaspoon sugar
- 2 lbs sweet potatoes, peeled, quartered lengthwise, and cut into 1/4-inch thick slices
Recipe
- 1 combine the butter, 2 tablespoons cream, 1/2 teaspoon salt, 1/4 teaspoon pepper, sugar, and sweet potatoes in a large saucepan.
- 2 cook, covered, over low heat until the potatoes are fall-apart tender, 35-40 minutes.
- 3 off the heat, add the remaining 1 tablespoon cream and mash the sweet potatoes with a potato masher; serve.
