Ingredients

- 4 lbs potatoes, peeled and cubed
- 1/2 lb green onion, chopped (scallions)
- 1 cup milk
- 2 teaspoons salt
- 4 ounces butter
Recipe
- 1 boil the potatoes until cooked, about 10 minutes.
- 2 simmer the green onions in milk for about 5 minutes
- 3 drain potatoes and mash.
- 4 add the hot milk and scallions, salt, pepper and half the butter and mix.
- 5 dot with the rest of the butter and serve immediately.
