Baked Stuffed Sweet Potatoes

Ingredients

  • Servings: 4
  • 3 large sweet potatoes, sliced in half lengthways
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 1 small green pepper, seeds removed, finely diced
  • 2 stalks celery, finely diced
  • 1 red chili pepper, seeds removed, finely diced
  • 2 ounces cilantro (leaves and stalks)
  • 2 ounces butter
  • 7 tablespoons cream
  • 1 tablespoon cajun seasoning, plus extra for sprinkling

Recipe

  • 1 preheat the oven to 350°f
  • 2 rub the potatoes all over with the olive oil, season with salt and arrange on a baking tray. place on the top shelf of the oven and bake for 45-50 minutes, until the flesh is soft.
  • 3 remove from the oven and leave to cool slightly. when cool enough to handle, use a teaspoon to scrape out the flesh into a bowl, taking care not to break the skin. return the empty skins to the baking tray and set aside.
  • 4 add all the remaining ingredients to the potato flesh and mix well. spoon the mixture back into the potato skins, season with salt and black pepper and sprinkle over a little extra cajun seasoning. return to the oven for 20-25 minutes, until golden-brown.
