Baked Sweet Potatoes With Candied Ginger Cream

Ingredients

  • Servings: 4
  • 4 sweet potatoes or 4 yams
  • 4 tablespoons butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup sour cream
  • 2 scallions, chopped
  • 1 tablespoon candied ginger, finely chopped

Recipe

  • 1 preheat oven to 375. wrap each potato in foil. with a fork, poke several holes in flesh.
  • 2 bake until tender, about 1 hour.
  • 3 slice potatoes open and insert 1 tablespoon in each. sprinkle with salt and pepper.
  • 4 meanwhile, in a small bowl, mix sour cream, scallions, and candied ginger. serve as a topping for the potatoes.
