Baked Sweet Potatoes With Candied Ginger Cream

- 4 sweet potatoes or 4 yams
- 4 tablespoons butter
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup sour cream
- 2 scallions, chopped
- 1 tablespoon candied ginger, finely chopped
Recipe
- 1 preheat oven to 375. wrap each potato in foil. with a fork, poke several holes in flesh.
- 2 bake until tender, about 1 hour.
- 3 slice potatoes open and insert 1 tablespoon in each. sprinkle with salt and pepper.
- 4 meanwhile, in a small bowl, mix sour cream, scallions, and candied ginger. serve as a topping for the potatoes.
