Cinnamon-cranberry Lamb Tenderloin

Ingredients
- Servings: 4
- 2 teaspoons ground cinnamon
- 3 tablespoons olive oil
- 2 lamb tenderloin
- 1 onion, finely chopped
- 2 garlic cloves, finely chopped
- 1 1/2 cups fresh cranberries or 1 1/2 cups frozen cranberries
- 1/4 cup honey
- 1/2 cup chicken stock
Recipe
- 1 put grill in the center of the oven.
- 2 preheat oven at 375°f.
- 3 in a bowl, mix cinnamon and 1 tablespoon of oil.
- 4 baste tenderloins with this cinnamon oil.
- 5 salt and pepper if wanted.
- 6 in a big skillet oven proof, brown lamb tenderloins in the remaining oil at high heat.
- 7 set aside on a plate.
- 8 in the same skillet, grill onion and garlic.
- 9 add oil if needed.
- 10 add remaining ingredients and bring to boil.
- 11 put back the tenderloins and cook in the oven 15 to 20 minutes for a medium cooking.
- 12 cover with aluminium paper and let stand 5 minutes.
- 13 slice lamb tenderloins and sprinkle with the cooking juices.
- 14 delicious with leek potatoes gratin, rice or couscous.
