Cinnamon-cranberry Lamb Tenderloin

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 2 teaspoons ground cinnamon
  • 3 tablespoons olive oil
  • 2 lamb tenderloin
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 1/2 cups fresh cranberries or 1 1/2 cups frozen cranberries
  • 1/4 cup honey
  • 1/2 cup chicken stock

Recipe

  • 1 put grill in the center of the oven.
  • 2 preheat oven at 375°f.
  • 3 in a bowl, mix cinnamon and 1 tablespoon of oil.
  • 4 baste tenderloins with this cinnamon oil.
  • 5 salt and pepper if wanted.
  • 6 in a big skillet oven proof, brown lamb tenderloins in the remaining oil at high heat.
  • 7 set aside on a plate.
  • 8 in the same skillet, grill onion and garlic.
  • 9 add oil if needed.
  • 10 add remaining ingredients and bring to boil.
  • 11 put back the tenderloins and cook in the oven 15 to 20 minutes for a medium cooking.
  • 12 cover with aluminium paper and let stand 5 minutes.
  • 13 slice lamb tenderloins and sprinkle with the cooking juices.
  • 14 delicious with leek potatoes gratin, rice or couscous.
