Creamy Lamb One Pot

Total Time: 45 mins Preparation Time: 5 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 1 tablespoon vegetable oil
  • 3 onions, finely sliced
  • 1 1/3 lbs lamb shoulder chops, cut into chunks
  • 1 ounce fresh sage, leaves picked off and chopped
  • 1 3/4 cups chicken broth
  • 4 1/2 ounces cream cheese with chives
  • 1 lb new potato
  • salt and pepper

Recipe

  • 1 heat the oil in a large saucepan with a lid, add the onions and cook for 10 mins stirring regularly, till they start to brown. turn up the heat and add the lamb cooking till it’s browned on all sides.
  • 2 sprinkle in the sage and stir then add the broth and bring to a simmer. put the lid on and cook for 30mins until the lamb is tender and cooked through. stir in the cream cheese and season to taste.
  • 3 cook the potatoes in boiling water for 15-20mins untill they are cooked through, drain and crush them sightly, season to taste. serve the potatoes accompanied by a good spoonful of the lamb casserole and your favourite greens.
