Creamy Potato Bake

Ingredients

  • Servings: 8
  • 1 (250 g) package cream cheese, softened (regular or light)
  • 8 medium potatoes, peeled, cooked and mashed
  • 1 egg, slightly beaten
  • 2 tablespoons green onions or 2 tablespoons fresh chives, finely chopped
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon butter
  • salt and pepper

Recipe

  • 1 using an electric mixer, whip the cream cheese until light and fluffy. add mashed potatoes and beat until well combined and smooth. stir in beaten egg, green onion or chives, and parsley. season to taste with salt and pepper. place potato mixture into a well-greased casserole dish, dot with butter and bake in a preheated 350f oven for 40-45 minutes.
