Barley And Sweet Potato Chili

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 tablespoon olive oil
  • 2 onions, diced
  • 2 garlic cloves
  • 1 tablespoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup barley
  • tomato with juice
  • 1 cup broth
  • 2 medium sweet potatoes, peeled and diced
  • 1 (14 ounce) can kidney beans or 1 (14 ounce) can black beans, rinsed
  • 1 tablespoon chili powder
  • 2 tablespoons lime juice

Recipe

  • 1 heat oil. add onions and sautee for 3 minutes.
  • 2 add garlic and spices, sautee for 1 minute.
  • 3 add barley, stir well.
  • 4 add tomatoes, broth, sweet potatoes and beans.
  • 5 cook in slow cooker on low for 6-8 hours or on high for 3-4 hours.
  • 6 or on stove top, simmer until sweat potatoes are cooked, 20-30 minutes.
  • 7 dissolve chili powder in lime juice. mix into chili.
