Breakfast Hash Brown Omelette

Total Time: 50 mins Preparation Time: 15 mins Cook Time: 35 mins

Ingredients

  • Servings: 4
  • 6 slices bacon
  • 3 cups frozen hash brown potatoes or 3 cups shredded cooked potatoes
  • 1/2 cup chopped green pepper
  • 1/3 cup bick's onion relish
  • 6 eggs
  • 1/4 cup milk
  • salt and pepper
  • 1 cup shredded cheddar cheese

Recipe

  • 1 cook bacon in 10-inch frying pan until crisp. remove from pan. drain and dice.
  • 2 leave 2 tablespoons drippings in pan. add potaotes. cook, stirring occasionally, until heated through. add green peppers and relish. cook 15-20 minutes or until underside is starting to brown.
  • 3 beat eggs, milk, salt and pepper in medium bowl. stir in cheese and bacon. pour evenly over potatoes. mix slightly to let egg mixture seep through potatoes.
  • 4 cover; cook on low for 8-10 minutes, or until eggs are set. if desired, broil lightly to brown. loosen edges. serve in wedges.
