Breakfast Hash Brown Omelette

Ingredients

- 6 slices bacon
- 3 cups frozen hash brown potatoes or 3 cups shredded cooked potatoes
- 1/2 cup chopped green pepper
- 1/3 cup bick's onion relish
- 6 eggs
- 1/4 cup milk
- salt and pepper
- 1 cup shredded cheddar cheese
Recipe
- 1 cook bacon in 10-inch frying pan until crisp. remove from pan. drain and dice.
- 2 leave 2 tablespoons drippings in pan. add potaotes. cook, stirring occasionally, until heated through. add green peppers and relish. cook 15-20 minutes or until underside is starting to brown.
- 3 beat eggs, milk, salt and pepper in medium bowl. stir in cheese and bacon. pour evenly over potatoes. mix slightly to let egg mixture seep through potatoes.
- 4 cover; cook on low for 8-10 minutes, or until eggs are set. if desired, broil lightly to brown. loosen edges. serve in wedges.
