Breakfast Hash

Total Time: 50 mins Preparation Time: 15 mins Cook Time: 35 mins

Ingredients

  • Servings: 6
  • 1 lb sausage (as spicy or mild as you like)
  • 2 cups new potatoes, peeled and chopped
  • 2 ounces red peppers, chopped
  • 2 ounces sweet onions, chopped
  • 6 eggs
  • 1 fluid ounce table cream

Recipe

  • 1 crumble sausage into large skillet.
  • 2 add potatoes, peppers and onion, and cook over low heat until sausage is browned and potatoes are fork-tender, stirring occasionally.
  • 3 drain off any drippings.
  • 4 whisk eggs and milk in small bowl until blended.
  • 5 add to sausage mixture; scramble until eggs are set but not dry.
  • 6 serve hot, and refrigerate leftovers.
