Creamy Onion & Garlic Mashed Potatoes

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 1/3 cup onion, chopped
  • 3 tablespoons garlic, minced
  • 2 tablespoons olive oil
  • 3 lbs potatoes
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 cup heavy cream or 1/4 cup whipping cream
  • 2 tablespoons butter
  • 2 tablespoons milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Recipe

  • 1 peel potatoes, cut in chunks, cover with water and boil in a big pot about 15-20 minutes or until soft and will mash easily.
  • 2 meanwhile, in a small skillet, saute onion and garlic in olive oil until soft- don't allow to brown or burn.
  • 3 set aside.
  • 4 drain potatoes and return to pan, add onion-garlic mixture and all other ingredients.
  • 5 mash with potato masher for lumpier potatoes or use your mixer for smoother texture.
  • 6 serve hot.
