Chili-topped Potatoes

Ingredients

  • Servings: 4
  • 4 large baking potatoes
  • vegetable oil
  • 1/2 lb ground beef
  • 1/3 cup finely chopped onion
  • 1 garlic clove, minced
  • 1 (8 ounce) can tomato sauce
  • 1/2 cup water
  • 1 -1 1/2 tablespoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • shredded cheddar cheese
  • chopped green onion

Recipe

  • 1 wash potatoes and rub with oil. bake at 400 degrees for 1 hour or until soft when pierced with a fork.
  • 2 cook ground beef, onion and garlic in a large skillet until beef is browned, stirring to crumble. drain well. add next 5 ingredients; reduce heat and simmer 30 minutes or until thickened.
  • 3 split tops of potatoes lengthwise and fluff pulp with a fork. spoon topping over potatoes. sprinkle with cheese and green onions.
