Breakfast Casserole

Total Time: 50 mins Preparation Time: 15 mins Cook Time: 35 mins

Ingredients

  • Servings: 5
  • 1 lb sliced bacon or 1 lb ham, diced
  • 1 medium onion, diced
  • 6 eggs, lightly beaten
  • 4 cups frozen hash brown potatoes, thawed
  • 2 cups shredded cheddar cheese
  • 1 1/2 cups small curd cottage cheese
  • 1 1/4 cups shredded swiss cheese

Recipe

  • 1 in a large frying pan, cook bacon and onion until bacon is crisp; drain.
  • 2 combine the remaining ingredients in a bowl then add bacon and onions. transfer to a greased 13x9x2"-inch baking dish.
  • 3 bake, uncovered, at 350 for 35-40 minutes or until set and bubbly. let stand for 10 minutes before cutting.
