Baked Red Potatoes With Anchovies & Tomatoes

Total Time: 1 hr 20 mins Preparation Time: 40 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 2 lbs red potatoes, peeled
  • 2 tablespoons olive oil
  • 1 (14 ounce) can diced tomatoes, drained
  • 1 garlic clove, minced
  • 2 tablespoons canned anchovies, drained and chopped
  • 1/4 cup parmesan cheese, freshly grated

Recipe

  • 1 in a large pot of lightly salted water, boil potatoes until tender.
  • 2 drain and let cool enough to handle then slice.
  • 3 preheat oven to 350*f.
  • 4 in a large skillet heat oilive oil over med-high heat.
  • 5 saute tomatoes and garlic until aromatic, stir in anchovies.
  • 6 layer potatoes and tomato mixture in a 8 cup casserole dish and sprinkle with cheese.
  • 7 bake for 40 minutes, or until hot and bubbling.
