Capsicum (bell Peppers) And Potato Masala

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 5 green bell peppers, cubed
  • 1 large potato, cubed
  • 1 tablespoon oil
  • 1/4 teaspoon mustard seeds
  • 1/2 teaspoon cumin seed
  • 6 curry leaves (optional)
  • 1 medium onion, chopped
  • 1 teaspoon salt
  • 1/4 teaspoon turmeric
  • 1/2 inch ginger, grated
  • 1 garlic clove, mashed
  • 1/2 teaspoon coriander powder
  • 1/4 teaspoon chili powder
  • fresh coriander leaves (to garnish)

Recipe

  • 1 heat the oil in pot, when hot add the mustard and cumin seeds, allow them to spatter, and add the curry leaves.
  • 2 add the onions and potatoes and the salt. cook till the onions are light golden colour.
  • 3 add the turmeric, ginger and garlic, stir.
  • 4 add the capsicum, stir to mix ingredients together.
  • 5 add the corinader and chilli powders.
  • 6 turn heat to low and cook uncovered till potaoes and capsicum are cooked.
  • 7 serve garnished with the coriander leaves.
