Blue Cheese New Potatos

- 2 lbs new potatoes
- 1 sprig fresh rosemary
- 2 tablespoons olive oil
- 1/4 cup blue cheese, crumbles
- kosher salt
- pepper
- 1 green onion, chopped
Recipe
- 1 preheat oven to 350 degrees.
- 2 clean potatoes and slice in half.
- 3 coat casserole dish in 1 tbsp olive oil and add potatos and rosemary and drizzle with remaining olive oil.
- 4 cook covered at 350 for 45 minute.
- 5 uncover and sprinkle with blue cheese. return to oven and cook uncovered until cheese has slightly browned. about 10 minutes.
- 6 garnish with green onion. add salt and pepper to taste.
