Creamy Sweet Potato Zucchini Soup

Ingredients

• 2 large zucchini, chopped and peeled
• 2 large sweet potatoes, chopped and peeled
• 1 large onion, diced
• 1 carrot, chopped
• 1 cup water
• 1 tablespoon cooking sherry (if you have it)
• 1 tablespoon chicken consomme
• 1 teaspoon salt
• 2/3 cup milk

Recipe

• 1 sauté onion until transparent.
• 2 add the zucchini, sweet potato, and carrot.
• 3 sauté for about 20 minutes, then add water, sherry, and milk.
• 4 cover pot and let simmer for about a half hour.
• 5 once everything is soft, puree with immersion blender.
• 6 taste and adjust seasonings.
