Bruce's Favorite

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 2
  • 4 -6 potatoes
  • 1 onion
  • 6 -8 slices bacon
  • olive oil
  • green chili pepper
  • flour tortilla
  • 2 -3 eggs
  • shredded cheddar cheese
  • avocado

Recipe

  • 1 wash and slice potatoes.
  • 2 chop onion.
  • 3 cook bacon; set aside.
  • 4 brown potatoes and onion in olive oil until tender.
  • 5 add green chili pepper; i like the kroger brand of new mexico style green chili salsa, or chopped green chili will do.
  • 6 dish up potatoes onto flour tortilla on plate, cut up bacon add on top of potatoes.
  • 7 fry eggs over easy or desired style.
  • 8 add eggs to top of bacon pile with potatoes.
  • 9 cover with cheese immediately.
  • 10 top with a few slices of avocado.
  • 11 notes:.
  • 12 omit the bacon or use turkey bacon for different diets.
  • 13 you can also add pinto beans for more fiber.
  • 14 yummmmm.
