Ingredients

- 4 -6 potatoes
- 1 onion
- 6 -8 slices bacon
- olive oil
- green chili pepper
- flour tortilla
- 2 -3 eggs
- shredded cheddar cheese
- avocado
Recipe
- 1 wash and slice potatoes.
- 2 chop onion.
- 3 cook bacon; set aside.
- 4 brown potatoes and onion in olive oil until tender.
- 5 add green chili pepper; i like the kroger brand of new mexico style green chili salsa, or chopped green chili will do.
- 6 dish up potatoes onto flour tortilla on plate, cut up bacon add on top of potatoes.
- 7 fry eggs over easy or desired style.
- 8 add eggs to top of bacon pile with potatoes.
- 9 cover with cheese immediately.
- 10 top with a few slices of avocado.
- 11 notes:.
- 12 omit the bacon or use turkey bacon for different diets.
- 13 you can also add pinto beans for more fiber.
