Abby Ray's Mashed Potato Soup

Ingredients

- extra virgin olive oil
- 6 slices bacon
- 4 tablespoons butter
- 1 small onion, chopped
- 4 tablespoons flour
- 1 quart chicken stock
- 2 cups mashed potatoes
- 8 ounces cheddar cheese
Recipe
- 1 in a sauce pan, heat the evoo, add bacon and cook till crispy. remove the bacon with a slotted spoon.
- 2 drain the fat from the pan and add butter. after the butter is melted add the onion, cook until it softens.
- 3 sprinkle flour over the mixture stirring with a wooden spoon.
- 4 whisk the chicken stock and bring to a boil cooking until thickened 2-3 minutes.
- 5 whisk mashed potatoes in and then stir in cheddar cheese.
- 6 cook until hot, the cheese in melted and blended.
