Abby Ray's Mashed Potato Soup

Ingredients

  • Servings: 4
  • extra virgin olive oil
  • 6 slices bacon
  • 4 tablespoons butter
  • 1 small onion, chopped
  • 4 tablespoons flour
  • 1 quart chicken stock
  • 2 cups mashed potatoes
  • 8 ounces cheddar cheese

Recipe

  • 1 in a sauce pan, heat the evoo, add bacon and cook till crispy. remove the bacon with a slotted spoon.
  • 2 drain the fat from the pan and add butter. after the butter is melted add the onion, cook until it softens.
  • 3 sprinkle flour over the mixture stirring with a wooden spoon.
  • 4 whisk the chicken stock and bring to a boil cooking until thickened 2-3 minutes.
  • 5 whisk mashed potatoes in and then stir in cheddar cheese.
  • 6 cook until hot, the cheese in melted and blended.
