Cauliflower Potato Lentil Smash

Ingredients

- 1 large onion, chopped
- 2 cloves garlic, minced
- 1/4 cup water
- 2 tablespoons cumin
- 2 tablespoons chili powder
- 2 tablespoons curry powder
- 4 cups vegetable broth
- 1 cup lentils
- 1 (15 ounce) can stewed tomatoes
- 2 small red potatoes, chopped
- 1 small cauliflower
- 2 cups frozen peas
- 1/4 cup cilantro, chopped
Recipe
- 1 place onion and garlic in a large pot with water to cook, stirring for a couple of minutes.
- 2 add 1 tablespoon each of cumin, chili powder, and curry powder and stir to coat.
- 3 add the vegetable stock and lentils.
- 4 mix well, bring to a boil, reduce the heat, cover, and cook for 30 minutes.
- 5 add the tomatoes, potatoes and cauliflower.
- 6 add another tablespoon each of cumin, chili powder, and curry, if desired (to taste).
- 7 continue to cook for another 30 minutes.
- 8 stir in the peas.
- 9 cook for 5 minutes.
- 10 remove from the heat and stir in the cilantro.
