Apple And Chicken Hash

Ingredients

  • Servings: 4
  • 1 tablespoon olive oil, divided
  • 1 cup chopped onion
  • 2 tart cooking apples, peeled, cored, and finely chopped
  • 2 cups cubed peeled baked potatoes
  • 1 1/2 cups chopped skinless boneless rotisserie cooked chicken
  • 1 teaspoon chopped fresh sage
  • 3/4 teaspoon salt
  • 1/4 teaspoon fresh ground black pepper
  • 1/4 teaspoon paprika

Recipe

  • 1 heat 1 1/2 teaspoon oil in a large nonstick skillet over medium-high heat.
  • 2 add in onion and apple; stir/saute 7 minutes or until mixture begins to brown.
  • 3 spoon mixture into a large bowl.
  • 4 add potato and remaining 5 ingredients to the bowl; toss well to mix.
  • 5 heat 1 1/2 teaspoons oil in skillet over medium heat.
  • 6 add apple mixture and pat into an even layer in skillet.
  • 7 cook, without stirring, 2 minutes.
  • 8 stir gently, cook 2 minutes or until potatoes begin to brown.
  • 9 serve right away.
