Ingredients

- 6 slices bacon
- 1 tablespoon butter
- 1 medium onion, chopped (about one cup)
- 4 medium potatoes, cooked and finely diced (about 2 1/2 cups)
- 6 large eggs
- 1/2 teaspoon salt
- fresh ground black pepper
- 1/4 cup milk
Recipe
- 1 in a frying pan, fry the bacon until crisp; remove and drain on paper towel.
- 2 drain most of the bacon fat from the frying pan, add the butter and saute' the onion until soft.
- 3 add the potatoes and brown lightly.
- 4 beat the eggs lightly and add the salt, pepper and milk, and finally the chopped bacon.
- 5 pour the egg mixture over the onions and potatoes and stir occasionally until cooked.
