Bauernfrühstück-farmers Breakfast Omelet

Ingredients

  • Servings: 2
  • 6 slices bacon
  • 1 tablespoon butter
  • 1 medium onion, chopped (about one cup)
  • 4 medium potatoes, cooked and finely diced (about 2 1/2 cups)
  • 6 large eggs
  • 1/2 teaspoon salt
  • fresh ground black pepper
  • 1/4 cup milk

Recipe

  • 1 in a frying pan, fry the bacon until crisp; remove and drain on paper towel.
  • 2 drain most of the bacon fat from the frying pan, add the butter and saute' the onion until soft.
  • 3 add the potatoes and brown lightly.
  • 4 beat the eggs lightly and add the salt, pepper and milk, and finally the chopped bacon.
  • 5 pour the egg mixture over the onions and potatoes and stir occasionally until cooked.
