Bj's Brunswick Stew

Total Time: 4 hrs Preparation Time: 1 hr Cook Time: 3 hrs

Ingredients

  • 3 1/2 lbs.- cooked chicken (grilled, bbq, boiled, broiled)
  • 3 1/2 lbs.- lamb (grilled, bbq, boiled, broiled)
  • 6 medium size potatoes (peeled and diced small)
  • 2 large onions (diced small)
  • 3 (28 ounce) cans diced tomatoes
  • 1 (28 ounce) can tomato sauce
  • 1 lb frozen lima beans (more if you like)
  • 1 lb frozen green beans (more if you like)
  • 2 (16 ounce) cans creamed corn
  • 2 (16 ounce) cans corn
  • 1/8 cup butter
  • 3 tablespoons salt (or to taste)
  • 1 tablespoon pepper (or to taste)
  • 2 ounces hot sauce (or to taste)
  • 1 tablespoon garlic powder ((or more) or 1 tablespoon garlic salt, if desired ((or more)
  • 1 tablespoon worcestershire sauce
  • 2 tablespoons paprika (optional)
  • 1/2 cup barbecue sauce (or to taste)

Recipe

  • 1 hand pick chicken and lamb into small pieces.
  • 2 sautee onions in butter until soft.
  • 3 add diced tomatoes and tomato sauce, and bring to simmer.
  • 4 add potatoes, lamb and chicken, and bring up to simmer again.
  • 5 add remaining ingredients and let simmer several hours, stirring every 5 minutes to prevent anything sticking to bottom of pot.
  • 6 serve hot with cornbread, biscuits, or crackers.
